From Our Kitchen to Yours: Mini Loaf Christmas Gifts

There’s something truly comforting about baking a batch of mini loaves — especially knowing that one simple base recipe can turn into a whole collection of flavours. This Christmas, we wanted to share a little piece of our kitchen with you. These soft, moist cakes are perfect for gifting, sharing, or even sneaking a slice (or two!) for yourself.
We experimented with a mix of classic and creative combinations, and the beauty of this recipe is that it’s wonderfully adaptable to whatever you have on hand.

Ingredients

- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- ¾ teaspoon salt
- ¼ teaspoon baking soda
- 2 teaspoons baking powder
- 2 cups all-purpose flour
- 1 cup plain non-fat Greek yogurt or sour cream

Method

- Preheat your oven to 180°C. Spray your mini loaf pans with non-stick cooking spray or line them with paper liners.
- In a large bowl, combine the flour, baking powder, baking soda, and salt. Stir well to mix evenly.
- In a separate bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well between each addition. Stir in the vanilla, followed by the Greek yogurt or sour cream, and mix until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined — careful not to overmix.

Fold your chosen additions through gently, then spoon the batter into the prepared pans.
Baking
Bake for 20–25 minutes, or until the edges are lightly golden and a skewer inserted into the centre comes out clean. Allow the loaves to cool in the pans for 5 minutes before transferring to a wire rack to cool completely.
Simple Lemon Icing 🍋
For a fresh finishing touch, whisk together icing sugar and lemon juice until smooth and pourable. Drizzle over the cooled loaves for a zesty, simple finish.
Gluten-Free Option
